Pepperchicken (kerala style)
Ingredients:
Chicken boneless 1/2 kg
ginger garlic paste: 1heaped tablespoon
ten -fifteen shallots chopped
lemon juice 2 tablespoons
chilli powder 1tbsp
turmeric pwdr 1/2tspn
salt as required
1/2 cup oil
For the dry masala1tbsp coriander
1tspn fennelseeds(saunf or aniseed)
1tsp pepper or more as taste
1tspn garam masala(elaichi,lavang and cinnamon)
1/2tspjeera or cummin
1 bayleaf
1sprig curry patta.
dhania patta for garnish
Method. Clean and chop chicken into equal piecas. Marinade in ginger garlic paste and lemon juice,. Keeep for an hour.
Dry roast coriander, fennel ,pepper and add garam masala after switching off gas. In another kadai fry shallots till brown. add curry patta after switching off gas. Grind the dry masala and shallots and curry patta.
Heat a kadai. pour in half cup oil. In the oil add chilli and haldi pwdr. Gently slide in chicken. Stir on high heat for some time. Add the masala and cook with little water. add salt ad more curry patta. Simmer on low fire till done. garnish withndhania patta . Voila, eat and enjoy!
